  Description: In a first for the drinks industry in Scotland, On-Trade Scotland’s cover story this month looks at the launch of an innovative project to highlight the profit potential in of cocktails. By teaming up with premium sprits distributor Cellar Trends and exotic fruit juice brand Rubicon OTS will spend the next six months showing readers just what’s possible. The project kicks off with a visit to Tonic in Edinburgh where the award-winning bar team create a range of five cocktails using Celler Trends wide range of spirits and liqueurs, and Rubicon’s selection of exotic fruit juices. The team also talk us through what makes the ideal cocktail offering and how to complement this with a high standard of service. This month also sees Kevin Scott take a visit to Fife to speak to Julian Mobbs, managing director of Gastro Taverns. In under two years Julian has turned an idea for giving local customers local produce in their pubs at affordable prices with a high standard of service, into a multi-million pound business with six venues across the east side of Scotland. This issue also see the conclusion of our project with Matthew Clark, focusing on maximising your wine sales. To round off the series we catch up with some of the team to find out what they’re own favourites wines are – and why pubs should be stocking them. We also visit The Telford Arms in Edinburgh with Coca-Cola Enterprises to look at what traditional pubs can do to keep healthy revenues coming in, in the face of the current problems they face. It's a fantastic store and if you ever have the chance to see it, make sure you do. Karen Peattie offers a touching and heart felt tribute to the late Eddie Thompson, who sadly passed away recently. Karen had been an industry-colleague and friend of Eddie's for more than 20 years and she is not alone in missing him. The results of our project where we put a S&N Sub-Zero chiller into three c-stores across Scotland are published this issue and prove beyond doubt that the concept is a good one - and also offers another USP the mults can't match.
